A true Micha Schäfer classic which dates back to 2016. Micha (being his typically grumpy self) hasn’t made it since, even though our guests kept asking for it. The secret ingredient is smoked butter, which lends an almost meaty flavour to the soup despite the fact that it is perfectly vegetarian.
Once you’ve opened the glass, keep it in the fridge and finish it within the next 2 to 3 days.
Get yourself some of our black pudding from Gut Hirschaue, cut it into chunks roughly half an inch thick and have it with the soup. Add some of our fermented mustard seed for an extra aromatic boost.
